Red face Coolant temperature sensor, help!

Hello everyone! First of all I apologize for my English, it's not my mother tongue. I'm from Uruguay, I came across with this forum trying to help my father in law to find a replacement for his coolant temperature sensor.

He has a W201 190E 1.8 which VIN is WDB2010181A594414. His coolant temperature sensor was broken so he bought a new one. The problem is that the previous sensor had a temperature range of 98C-93C but the new one is 107C-100C. He is very worried about this difference because he is afraid of damaging the headgasket or even the cylinder head because of overheating...

He noticed that since he has replaced the sensor tha water boils and if he removes the cap of the water deposit it flows with a lot of preassure...
