Everything you want to know about retrofitting the factory system is covered HERE. Your 2004 should have the prewire, and the documentation on installing the factory kit can be found HERE. The first link talks about how the system works, as well as covering some of the short cuts you can take.
If you want to read my writeup on installing in my '02 Coupe it is HERE.

I may be being stupid here, but how doni know if I have everything I need to use the phone function? I have just recently bought the car and the garage didn't explain it. When I press the phone on the stereo it says no phone. When I search for devices on my iPhone It doesn't find the car. Does that mean I need to add something to the car?

Paul, I believe your car is just pre-wired for the phone system (assuming it is anyways), but you'll still need additional hardware to use it. Being an '04 it does not have bluetooth so your phone will not pick it up. You'd need to end up buying a bluetooth puck.

<sigh> Paul...please read the links above. Your car has the pre-wiring, but there is a considerable amount that you still need to do in order to make it work.
The short answer is that NO...you do not have everything you need to make it work. Period. The longer answer is that you need to add at least an appropriate PSE, a Blue-Tooth cradle eliminator cable and a Bluetooth puck to get the system to work. There are aftermarket companies that make some options that use the factory pre-wiring and take the place of the PSE and Bluetooth puck.
You asked in an earlier post where to get owners manuals. You can get them from mbusa HERE (yes, this is another link...please click on it). You can download them as a pdf file for your particular car and year. You can also order a hard copy from them if you contact them.

I went to the dealership and they had the bluetooth module you plug in to your center console (45 female port, like a phone jack) and they were asking for something ridculous like $500 for it - so i went to AT&T and just got a bluetooth for my visor that will in fact go thru the stereo - sucks cause i wanted to use the cars featuresbut oh well.

No your best bet is to do the tape deck aux input method if you have the cassette tape head unit. You could also spend money for a device that replaces your cd changer but that gets expensive fast.
