Sounds like your power steering pump. There are lots of parts in the steering system, that being said it could be the rack. I have not replaced them so I am not sure how involved it is.

Thanks - is there any way of testing the pump before replacing it?

I had to replace my steering rack on my 2011 c300, fluid lines leaked on the rack, ps fluid was corrosive and will cause problems if not take care of.
I oaid $1300 for a new column and rack installed by the dealer.
The sound your is making is far worse than mine, recommend you take it in asap

How low was the fluid ?. How much did it require to bring it up to the correct level?.

It could be that you have air in the system.

Turn lock to lock 6-8 times & check level.(Preferably with front wheels elevated.)

Did you top up with the correct MB fluid?
