Have you done a quick release on any car before? What wires are you worried about? You can't run a quick release and maintain the airbag, etc. Those wires are run through a clock spring which you will not be utilizing any more. You could run a telephone cable style jumper harness to operate horn buttons if they are on your new wheel, but that will be a separate connection.
You need to find an adapter from the Mercedes hub to a universal 6 point attachment. From there on it is universal components for the quick release and the aftermarket steering wheel. Do not cheap out on the quick release. If you spend less than $100, you are getting a piece of junk. The one on the race car in my sig was over $300.
