I have noticed that when the car in in S+ and auto, it's downshifts are very loud and aggressive. When I change to manual and I downshift it is very reluctant to be as laud and seldom revs beyond minimum requirement of rev matching.
My W204 was loudest in the M mode when downshifting.

Am I suddenly forgetting how to do this???

If you want excitement and you are using M mode, try Race rather than Sport+. You get extra horse power, faster shifts and more pops on downshifts.

Also, do you have the performance exhaust? That will be louder than the stock exhaust.
