I know a lot of you guys wouldn't go for 20's, but if you did what would be the correct offset and width for the front and rear to sit flush and not rub with a slight drop.?

I would try Peter@ACGSD for some advice. These guys know.
My guess is 8.5 front ET 40 and 9.5 rear ET 50. It also depends on what tire make and size you are planning to run.

Be careful with 20s - I had rubbing trouble from the beginning. Can't remember tire info, but definitely stick with a super short sidewall.
