Volk puts a lot of time in engineering of their wheels for a specific vehicle. Once they make the wheel, it is as light as it can be and as strong as it can be. Any further adjustment will take them out of Volk's spec. The answer is no, Volk wheels do not have adjustable offset.

looks like both cars are lowered (first one especially low) im wondering if some spacers or some carefully selected tires can give it a more muscular stance on a non-lowered c63?

The first picture is a photoshop. the second picture is the actual fitment of the wheels. the offset is pretty good on them so I would not use a spacer. You can go with one size wider then stock on the tires.
