Service questions...
So I took my car in for service today because the "Service B" light was coming on.
According to the dealer at 40k they require a transmission fluid flush, differential fluid change, and oil change....along with the standard cabin filter, etc etc.
The service adviser claimed that not only do they flush the transmission fluid, but as per Mercedes requirement on AMG cars, they actually REMOVE the trans fluid pan from the car and use a special cleaning process to clean it. They then put the pan back on and refill the fluid. Can this be true??

Sounds like a stretch too me. Removing the pan and replacing the filter on the trans is a good idea. Cleaning out the pan is no big deal and I think your SA is having you on a bit to make it sound like it is more than it is.
My 2010 Service booklet requires a trans oil & filter change at 60000 km (37500 miles) or 3 years. It is a good idea to get it done.
My service booklet does not schedule a diff fluid change unless you have the (AMG Performance Package with the LSD). Again not a bad idea to get the diff fluid changed anyway at this mileage.
If you are at 4 years you should get your brake fluid changed as well.
Charging an arm and a leg?!?

My car does have the LSD. The SA showed me the recommended service sheet from Mercedes which said the tranny and LSD should be done at 40k. The trans service was $399, and the LSD fluid change was $100. According to the parts breakdown on my receipt, they did actually remove the tranny fluid pan and replace the gasket and clean it. Altogether with the oil change is was about $700
