What kind of numbers would...

a 2011 performance package car with a tune, k&n filters and a full headers back IPE system make roughly? Also, if this car already has a tune, does it need to be returned to stock before purchasing something like a Eurocharged v5? Or can it just be loaded over top?

This and that.
Loaded over top for the tune. Performance pack with just the tune is supposedly somewhere around 540 mark. Not sure how much the rest would add.

I just talked to someone at eurocharged and it sounds like I'd have to have the car put back to stock tune first. I don't want to quote him on this as I know there is variables but he said headers + full exhaust and a tune is around 500rwhp. that's healthy enough for me.

I have a P31 C63 and had eurocharged install a month or so ago. You just tell them what mods you have and where you live and they made the tune as per your altitude and everything. All i did was connect the reader to the car and install. Didn't uninstall anything first.

But you would have had a stock tune on before right? I think the reader is swapping the stock tune for the EC tune. I know this way you can always go back to stock for a service but I'm not sure if the reader MUST have a stock tune first to write the EC tune.

I see what you mean. Yes the first step is to get the stock tune on to the reader and send Eurocharged the file so they can adjust it according to your mods/altitude etc. Then you put that file on the reader and then the car.
