Does anyone know what physically hPpens to the stock exhaust when you switch from c to s or s+ or m? Obviously it gets louder and more burbles and backfires, but what causes that? Do flaps or valves etc open up like they do on the new w205 exhaust?

No physical changes happen in the exhaust system.
Burbles and backfires come from changes in fuel management.
Changes in volume come from you getting excited about the noise and getting more aggressive with the pedal on the right hand side.
