Aftermarket Rims and ABC
Just picked up an '04 CL500 and enjoying it immensely. I was thinking about picking up a set of rims to replace the standard set that came with the car. I spoke with one of the body guys at an authorized MB bodyshop and he said I should stick with the stock specifications because to do otherwise might mess up the ABC and how its programmed. Is this actually a concern? Or is it something that can be tweaked/tuned with access to the STAR system?

You need to stick with the "overall" diameter of the original rims and tires. You can use bigger rims as long as the rim + tire is not taller or shorter than the originals. Also, the offset should be spot on or as close to OEM as possible. I have 245/35/20 front and 285/30/20 rear on my car with no problems. Here is a link to a very helpful tire and rim size calculator. It will help you decide what tire and rim combo will work best.
