You didn't buy a lemon, you brought an old car with engine issue.
I hope you didn't spent too much money on this car. Your list is not hard to do, either you learn how to DIY, find a friend to help you, or sell it.

I don't have any tools or a space to work on a car unfortunately. Any help aprpeciated. I guess knowing a target price for this work would be a good place to start.
I bought the car for $8000 (already too much)
and have about $5000 into it already.
so I'm already way way above where I should be for it to be in this condition. This is my first car.

Wow, it must have been a show room car. Too bad it has a bad top end engine. did not think an old w124 convertible can be sold for almost $10k. I only got $1k trade in on my w124 coupe with rebuild head gasket and transmission. AC works, good internior, and paint.
You don't need special tools to pull the head out, a good machine shop can rebuild the valve and lifter for about $1k, the rest of other repairs can be work on the driveway.
There are many posts on the web to teach you how to remove the head, I have remove both heads on a m103 and m104 engines. Just be careful with the rubber tubing and wireless, these parts are old, and are easily break apart.
