After 8 Quarts my transmision still shows up low

Hello, I recently bought a 1998 Ml320 as a new daily driver because I was tired of driving my jeep Comanche, but I heard about the sealed for life transmission not being true, so I replaced my transmission oil,filter and gasket and I also drained the torque converter, from reading other forums. I then poured 7 quarts in and let the motor idle for about 30 minutes to warm up the transmission fluid, while the motor was idling I went through the gears for about 10 seconds each to circulate the fluid and I inserted my ebay dipstick and the oil showed up low, since it was low I added another quart and the fluid shows up half way on the dipstick (not on the 80 mark) and the fluid still shows up low. I've spoken with a certified Mercedes mechanic and he says that I shouldn't add more than 8 quarts. Since then the vehicle is sitting in my garage. Does anyone have any advice on what I did wrong? And is it dangerous to add more than the recommended amount of fluid to get to the hot mark on the dipstick?

You probably do not have the dip stick down far enough.
