Will it work on the 01 s500?

Yes! It comes out of my 2001 s500 actually.

How does it work? Can it be used with an iphone? Does it work with the command center and steering controls? Voice command?

Its plug and play. It has the pin for pairing on the bottom of it and you search the device from you phone or whatever and pair it with the pin. After that if your phone rings you can answer from the steering wheel hang up volume up and down the call. With the voice commands you make phonecalls and it'll go through your phone. Thats it

If your car isn't pre-wired with the cradle then the puck will not work.

Based upon my experience in getting my system to work, operator error is at least as likely as faulty equipment...
