Secondary cat delete + X-Pipe = excessive "popping"
I just had a Eurocharged short X-pipe installed in place of my secondary cats, and now when the engine is hot and I'm decelerating my exhaust makes very loud and rapid pop-pop-pop-pop-pop noises.
It sounded cool at first, but last night after an hour-long highway drive it was extremely loud, and even seemed to happen under constant throttle at low RPMs.
Has anyone else experienced this in an otherwise-stock C63 (6.2L)?

Yes that's so weird removing sound cancelling components in the exhaust and it's gotten louder
another stange occurrence is when a car is full decatted with headers and it becomes louder.... I guess these cars are just crazy like that

if that were the case you really drive heavy on the foot in an on and off fashion. the M156 tune is real real rich, and any on and off heavy throttle actions can and will induce excessive fuel which can and will cause popping and/or flames.

ok...so it sounds like your spark is dropping therefore missing/misfiring. i'd proceed to check your spark plugs for correct gap and age. then possibly look at plug color as it could show signs of coil pack failure.
beyond that maybe you have a leaking intake manifold gasket?

Over Run, most C63's with catted secondaries get the burble / pop sound. If you remove catalysts, you have to expect some unburnt fuel coming through. in effect causing the burbles and pops (which do sound nice

missing or popping at steady throttle is indicative of a dropped spark or faulty injector.
a vacuum leak could cause this as well, but your check engine light will fire a lean condition and/or misfire.

leaky injectors or misfiring spark was the first thing to come to mind. Also could be a leaky exhaust.
In fact after thinking about it, if this was the only thing you had done, I would have the exhaust re-checked.

My car with completely stock exhaust will pop and crackle just a little when the engine gets above 200 degrees or so, I think it is one of my favorite features of the car. But driving the huracan and hearing the popcorn machine that comes with that car is unreal!!
