Use 255/40/19's for winter?
So I have a daily driver '07 SL55, with the 255/35/19 285/30/19 wheel setup. Can I use (and stretch 2) 4 255/40/19 Yokohama iceGuard's on these wheels? I'm definitely a novice when it comes to tires, so that's the reason I ask.
I could also go with 255/35/19 285/40/19 Nokian's, but I'm estimating that they'd be at least twice the cost.

Or just call Tirerack and ask them to put together the right tire/wheel package. Better to have separate, less expensive wheels.
That said, good luck. Even with snow tires, our E55 was difficult, if not impossible. It's why I owned a 996TT when we lived with snow. AWD.
