MAF? Throttle body? What?
So at idle my RPM's surge from 600-1K. Fine, so I cleaned the throttle body. Didn't work. Today, some a-hole truck was trying to get by, so I punched the gas and the throttle response was so *****ty I practically got run off the road. So I started mashing down the gas (to the floor) and the throttle response was just absolute *****. Check engine light then came on. It runs fine if I drive it as I usually do BUT, there are times when you need to punch the gas and I want my throttle response back. What is going on?

If I floor it, the RPM's shoot to almost 6K RPM's b4 shifting. If I drive normal, it still takes a pinch too long to shift gears (It's an automatic).

I'm having the same exact symptoms as you explain. However I have a CEL with a p0420 that popped up. I believe my cat is in a bad state and causing back pressure or some kind of negative effect on the motor causing the shifting and 02 sensors to act funny. I'm going to try and have it looked at this weekend.

You need to get a good star scan. Either that or open up your wallet and say goodby to all your cash. It could be any of the things you mentioned or a bad cat, battery or pedal.
Try disconnecting the maf and see if it gets worse. Also disconnect the throttle body for about 10 min, plug it back in and see what that does (if anything)

Whats the code? Secondary air blahblah?
Thats the piece that opens to allow air from the
Supercharger...if it doesn't open, you got
like 1/2 power.
Fix is to replace it, or perhaps take it apart and clean it up.
There's a procedure around (M111 related, but might work for yours..who knows?)
called Learning in recirculation air flap...I've been having this issue periodically lately, so my flap thingy is on the way out, it looks just like a throttle body.
I got one from the pick and pull...haven't done anything with it yet.
1 When ignition is switched off press flap slightly past limp home
position. (ie normal resting position)
90° position must be changed manually. The processor
shut-off delay has a duration of approx. 5 seconds.
2.Switch on ignition for approx. 15 seconds, switch ignition
back off again and wait for processor shut-off delay.
3. Switch ignition on for approx. 45 seconds, switch ignition
back off again and wait for processor shut-off delay.
The learn-in procedure for the recirculated air flap is then
completed.
Wherever yours is located, you push it with your finger before turning the key (obviously requires 2 people) and it resets.

The code is P0238 -Turbocharger Boost Sensor A Circuit High.
Some guy followed this down the rabbit hole and found that it was caused by one of the inter-cooler hose connection clamps had slipped and left a gap for air to leak into. Does that mean it is also my problem or could any of the following be causing it?
Component B28 (Pressure sensor)
Component B18 (Altitude pressure sensor)
What C230 Sports Coup mentioned... Recirculating air flap actuator
Checking exhaust back pressure.
I don't actually know how to check the two components or back pressure.

First thing to do is check for air leaks on the inlet system/vacuum system after doing a throttle reset.
