C300 engine oil / overheat warning

If all the oil in a C300 engine leaked out somehow, wouldn't there be some sort of check engine light or warning that would tell the driver there was an issue with the car? Or is it possible to hit some road hazard (pothole) that would knock out and disable the oil sensor? I'm wondering because the dealership I'm having my vehicle serviced at is making some very odd claims...

There are the Check Engine Oil At Next Refueling and Engine Oil Level Low Stop Vehicle Turn Engine Off displays with warning messages. In addition, there is coolant over heat lamp if the oil has leaked out and overheating the car. I would imagine the CEL would come on when oil sensor is faulty. What are the odd claims and where in NJ?

I was driving through a road with ~1-2 inches of water and another car drove by splashing water on me. It didn't seem like a lot, but might have been enough to get inside the intake/engine. Car stalled and had to be towed.

The dealership is saying I hit something - very vague wording - that loosened or damaged the sensor and caused all the oil to drip out of the engine causing it to seize. They sent me pictures and I asked them how it was possible to damage these specific underpart of the car without damaging or scratching anything else around it and they reworded it saying I bottomed out the car and damaged the sensor - is this possible? Regardless, nothing was ever hit hard enough for me to worry about any damage to my car so this all sounds very unlikely. I suspect the engine might have been hydrolocked and the dealership's attempts to start and manually crank the engine might have at least added to the damage. There's even a hole in the oil pan and the engine needs to be replaced. They still don't know what the problem is because they refuse to look into it any more without an insurance adjuster going to see the car first. Any thoughts on what might have happened? Is it possible to damage the engine from manual cranking that would open up a hole in the engine causing the oil to leak out?

Yes similar lol - only a C300 engine costs $20k to replace instead of $70k for a C63
