You're going to be removing the cats - worst case you may see a check engine light.
I'd really be amazed if you blew your engine removing the catalytic converters. If you went off and removed the sensors relating to the speed density calcs in the intake track or fouled your O2 sensors.. maybe.
If you installed it today and tuned Saturday, you'll probably be fine. If you're REALLY worried about it, just stick in Comfort mode and drive like it was a classic Cadillac on your way to Sunday Church with a car full of open drinks w/o lids.

I had installed downpipes between my stage 1 and 2 tune. You will be fine as long as you stay out of boost. You may get a check engine light, but you can remove this with a simple OBDII reader. Enjoy stage 2!

I actually bought downpipes and then decided to not install them so I sold them. I too had wanted to hear what they sounded like with the PE but couldn't find a clip anywhere. I made my decision based on the opinion of someone who had them installed and then claimed to have them removed because it was too loud. You're in luck! Someone looked out for us...
I may buy them again now that I have an idea of what I'm getting
