But in principle the engine modes affect how the engine responds to throttle input as illustrated in the graph below. They affect how much throttle a specific pedal position produces. C has a mapping that looks like the Progressive gray curve. You have to push in the throttle pedal more to get a response from the engine. S+ looks more like the red curve and over boosts the throttle to give the impression the car is faster and more powerful. Race is like the blue curve, giving a linear throttle response, because that's what you want on a race track to exactly control the amount of throttle.
The transmission characteristics are similar. The transmission factors in throttle input, engine speed, acceleration etc. into deciding when to shift. The modes affect this mapping of the various inputs. It also affects the pressure regulator valves in the transmission to produce either a slower more comfortable shift, or a faster more aggressive shift.
