I'm thinking about ordering wheels for my car and want to know if I decide to get another car down the line how easy would it be to fit wheels on another type of Mercedes? Say if I would get a CLS, S class, or CL would 20" rims made for an E500 fit on other Mercedes or would I have to sell the wheels?

Depending on the wheels you get, they should also fit a CLS although the fitment will not be optimal... the wheels will be in further than on the E. Spacers can help with this. You didn't ask, but if you plan to get an SL-, you'll have the same issue.
The wheels also may fit on the S-/CL- but again the fitment is not optimal, as the wheels will stick out too far. Again depending on the wheels you get and the tire sizes you run and how low your car is, this may be a problem, or it may not.
