I am currently running 18" inch AMG wheels, with 225/40R18 FRONT and 255/35R18 REAR tires. The wheels came off an S-Class.
In order for the wheels to fit properly and look ok on my W211, I had to install 10mm Spacers (Hub Centric) on each wheel. It appears to me that the car "shimmies" somewhat when going in a turn, mostly noticeable at Highway Speeds and when the pavement becomes somewhat uneven, feels like the rear end is moving and it does not feel safe.
Prior to installation, I have been assured that spacers should not affect the performance/ride of the car, but am wondering if I was misinformed and what your guys' opinion out there is? Now, ........ I do like the look of this AMG monoblock wheel on my car, (See pic. 1), but as already explained, it appears that the car is acting a bit weird, .......................... I don't know.
In pic 2 (which I found on the web, NOT my car), you can see the wheel style of a set which I found on craigslist used, came off a 2009 E350. Tires 245/40R18 FRONT and 265/35R18 REAR .
TWO QUESTION:
1.) Will these wheels with wider tires fit my 2003 E320 with NO Sports Package?
2.) What are your thoughts in regards to the look of these wheels? I do not care for custom wheels and would like to stay OEM, 18" inches is a big as I would like to go.

Do you have picture of the spacers? From what I have seen hubcentric 10 mm spacers don't exist.
Too thick to catch original hub lips and too thin to make double adapter.
So if your install your wheels without center guidance - you can expect all kind of problems.

I do not have pictures of the spacers, but have seen them prior to install. They are indeed 10mm thick, hubcentric.
Just a quick search on eBay confirms that 10mm hubcentric spacers are available for our cars, my spacers look just like it.
Which one?
The first link shows generic picture, while 2nd shows the 10 mm spacer with no centering lip.
Regardless what salesman told you, spacers do affect performance and safety. I would double check everything as it doesn't take much with spacers to get messy setup.
Hope you did not put too long bolts that are grinding parking brake?

I think I know what you are dealing with on the S-Class wheels. I recently picked up a set of AMG Style IV's in S-class fitment to put on my W211 E-Class. I was disappointed when they didn't fit. After a bit of digging, I figured out that Style IV's came in a bunch of different sizes/offsets. If the monoblocks you have are anything like the Style IV's I got, I am surprised you didn't need longer wheel bolts to mount the wheels.
With regards to the 18" E350 wheels. They will fit no problem. I actually ended up moving my E55 fitment Style IV's to the front with a 265/40/18 tire and bought a pair of CLS fitment Style IV's for the rear and mounted a 285/35/18 tire. This is all on a 2005 E320 CDI. Zero rubbing anywhere but SUPER CLOSE, car also tracks straight as an arrow and handles turns much better now with the slightly wider track.
So final specs are:
Front: 18x9.0 et39 265/40/18
Rear: 18x9.5 et28 285/35/18

You will find good number of wheels that fit E class as SL, SLK, C-class are directly comparable.
Why run into hassle and risk of spacers?
I am big fan of classic monoblocks and those you have don't fit my taste.
But when I got mine 2008 E320BT, the 5-spoke wheels grew up on me. I am practical man and the 10-spokes I had on older MB drove me crazy with cleaning.
Years ago I bought a set of very classic monoblocks by Lorinser. Have 6 of them total and 2 on my SL, where AMG monoblocks do have some damages.. I even added the extended bolts from W210 on my R129 to fill blind bolt holes.
The only things that keep me from putting them on newer cars I have are TPMs, but once tire wear out and I will have to buy new ones, the monoblocks are first on the list.
They are over 20 years old, but design is timeless.I only hope I can fit TPMs on them.

Do you know the correct off set for the W211???
I do not have the original lug bolts and wheel studs were installed, so I would imagine they are longer than stock.

I have received pictures from the seller, hence I stated the rim size, tire size and off sets below. This is what I got from the pictures.
front 8.5x18, 245/40 18, ET 48
rear 9 x18, 265/35 18, ET 54
Based on the PDF file I just posted below, these off sets will not work for the W211.
The seller is willing to ship to Sacramento, so no long drive.
I bet he does.

The tire sizes you mentioned earlier with the correct offsets should work just fine.
There isn't a "one offset fits all" for the W211 since wheels come in various widths. You can use E55 Style IV dimensions as a baseline, keep in mind that they tuck a fair amount so you have about 15-20mm in either direction to go wider.
E55 AMG Style IV wheel dimensions:
Front - 18x8 et30
Rear - 18x9 et39
