Water Pump/Thermostat
I have the new water pump and thermostat ready for install... All I need is the weather to cooperate but not expected until at least middle of month.
The question is with the steel and rubber coated gaskets do I still need or want RTV? Do I want RTV, Gasket OR BOTH? I am thinking one or the other as the last time I used RTV on a rubber gasket it leaked.

You typically don't use any sealant on rubber gaskets. Tightening the bolts makes the rubber grip the clean surfaces for sealing.
Exception example is sometimes at a sharp corner of a valve cover gasket, sealant can be applied if recommended by mfg.
Misc preference: I have long switched to Hondabond over regular rtv for sealant applications, amazing stuff.
