Pork Rouladen

Get about 2 - 3 lbs of boneless Pork Loin

Trim off all the fat

Slice, long way, into 1/4" thick strips (if too small do 1/2" and pound it down to 1/4" thickness)

Get some Proscuitto (any other type Ham or Bacon will work as well)

Now take your pork slices , lay the Proscuitto on them (tickness to taste), roll them up together (pork on outside) and pin them closed

Poke these pork rolls with a fork all around.

Season with salt and white pepper; add red pepper or paprika for spicyness if desired. Rub in.

Grab a small - medium yellow onion, quarter it and peel it. Throw away the outside layer.

Add 4 - 6 spoons of garlic butter (regular butter will do) to your pot and melt. Add more if needed during browning.

Now add your rouladens and the onion slices into the pot and brown on all sides. Onions will almost be black.

Add water to cover all the meat

Add salt, black pepper (pepper or paprika for spicyness if desired), and bay leaves (1 or 2).

Cook (boil) on medium-lo (electric stove - for gas make adjustments)

Do this for about 2 hrs in an open pot. Keep refilling the water to keep the pork covered.

During the last 1/2 hr add some Maggi (or soy sauce) to it.

Remove the rouladens.

Remove the onions and bay leaves.

Thicken the broth with unbleached flower. (This is a tricky part)

Voila

Serve with the other stuff, potatoes, veggies, etc, you were fixing at the same time. Don't forget to remove the pins.
