It resets the stored values of the ride height system including the level sensors so that the system will readjust from the correct new settings.
Also it will clear errors that occur from a leaking strut that causes the computer to cut off the compressor and stops sending air to the strut('s).

I would think turning the ignition off and on again would do the first part.

I made an appointment with my local Mercedes dealership for an Airmatic Diagnostic scan this Thursday! $165.00
At least instead of buying new expensive parts, I’ll have an answer to what the problem is and what needs to repaired. It would be nice if it was a simple Airmatic system reset!

Unfortunately the right rear is sagging after replacing both rear air shocks. I checked the rear air shocks, connecting fittings, lines in the engine bay and the valve block and couldn’t locate any air leaks. The Airmatic diagnostic test will tell me why the right rear is sagging without having to buy additional expensive parts to resolve the issue or merely a computer air setting reset.

I didn’t check the leveling sensors for easy movement. Can I move the ride leveler by hand to make sure its working properly or will I need to loosen one of the 10mm nuts? What can I use to clean the ride leveler? Is this the correct part if I need to replace the ride leveler? Is OEM best?

It 'is' still sagging? OK, I guess I was going off of Kombifan's response that it was no longer sagging and you didn't correct that.
See my post about the arms... pop the connector arm off of one ball. See how things move. You'll know if something is frozen/gunked up.

Does the 2012 GL350 have (2) front height level sensors and (1) rear height level sensor which control both rear air shocks?

1 on each corner.
You can move rhem by hand. If theyre stuck* they can give you problems.

So would I be able to get underneath the car and without loosening the sensor bracket, manually move the height level sponsor by hand?

**UPDATE**
I took my GL350 to my local Mercedes dealership and had a Airmatic diagnostic completed at $165.00 I was advised the right rear air shock was leaking at the fitting. Having just replaced and installed the right rear air shock with Arnott A-2596 by a local mechanic, I immediately contacted Arnott Industries and spoke to a representative who advised me Arnott guarantees their product and to return the defective air shock back for a full refund.
Awesome customer service. Nice when you buy quality products and it’s back by a quality company,

If I were you, I'd check again with the soapy water. Do the off-road suspension lift, put a jack under the differential for safety, and squirt soapy water on that fitting - before going to the trouble of shipping and R&R.
Arnott is a great company, but it can't hurt to save everyone the trouble.

I checked the right rear air shock prior to going to the Mercedes dealership but I couldn’t locate a leak. I was advised by the tech they used forced pressure into the air line and found the leak at the fitting. So I’m assuming his diagnosis was correct.
