2011 GL550 shows overheating
So at sea level, a boiling pan of water would just begin to show opening.
How that translates to temperature stability depends on the rate at which the coolant is being moved, the rate at which heat is being pushed into the coolant, and the rate at which the radiator sheds heat to the environment.
If the pumping is fast, the heat rate is low, and the radiator is big and/or the ambient temperature is low, the coolant temperature will remain very close to the initial opening temperature.
If you heated oil on the stove, you could figure out the temperature at which the thermostat is fully open.
