I wouldve totally gone with the allshare but the whole hcdp thing makes it harder to find a hdmi to analog solution. Boooo to mercedes for not putting in a digital input. I wonder if theyll ever make a screen mirroring device that integrates into the MOST fiber optic ring. That would be the cats pajamas but doubtful theyll ever do that

Are you sure that it is HDCP that the Allshare Hub requires? As far as I know, HDCP only kicks in on HDMI -> HDMI. When you go from high quality to low (like VGA or composite), HDCP is not enforced. I use an Allshare Hub with an HDMI to VGA adapter (obviously not HDCP compliant) and it works fine. The trick for me was to find a HDMI to VGA that gives the proper return signal. Apparently, Allshare will not provide an output unless the output device shows that it is "on".

On the noise, you can try wrapping some chokes/ferrite core filters around the power input and composite leads.

Lastly, just FYI, I was able to locate a (just one) ignition switched 12V under the driver side. The twist was that the engine had to be running. It was not energized when accessory was on (ignition on position 2, not 1). Maybe there are sources on the passenger side that behaves the same way....
