1970 300 sel 6.3 help

Hi everyone, new member here. I am a long term car person, I've had a w204 C63 for years, have a mitubishi evo that i hill climb and in the last couple of years I have been taking care of my dads 1970 300 Sel 6.3. He's recently passed and luckily before he did I managed to fix a rusted out left side strut tower (next to the battery) and a few other minor items to get it roadworthy and take him for one last drive. I'd now like to take proper care of the car but I don't know where to start. First off, is this the right forum and discussion area or is there a specific w109 section that I couldn't find?

I'll start with what I do. I start the car at least once a month, plan is to drive it at least monthly moving forward. I put a small amount of fuel in now and then so its mostly fresh instead of a full tank. i have other cars using this car more frequently is not realistic unless I get it to be reliable enough to drive to work every now and again. It is garaged, i have space and lots of tools, jacks, stands, basic hand tools, no specialist merc tools. I keep a battery maintainer on it. The car drops trans fluid, diff fluid, and oil slowly, plan is to check and top them up every now and then which is what my dad did in the later years. 40 years ago it was his daily.

Where do I go from here? Annual service at a specialist or can i DIY some? Do I need to attend to the diff and trans leaks or just keep topping up? What routine maintenance can and should I be doing? Everything works, the car starts first turn of the key, windows go up and down, doors lock slowly, wipers are slow but work. Air bags are about 10 years old and all inflate. Nothing major has been serviced in a good 10 years. Do the brakes and fluid need replacing due to age?

Sorry i realise my post is a bit of a ramble, I'm sure I'll get to know the car I'm just a bit lost as to where to start and want to avoid mistakes that might be obvious to people with these cars but not to me.

Thanks for any advice.
