Certainly it is a crapshoot on a 2004 with 120K miles. If you read through this forum you will see a good cross section of the problems encountered in the SL model. With that many miles you could either be fairly safe IF most of the failure based components have been replaced, or you could be very vulnerable if they have not been replaced and the car not maintained.
My advice, whatever you decide, is to be sure you can purchase a third party warranty on the car as all repairs are very expensive. If you can't find a warranty, then pass on the car unless you are willing to fund the things that seem to be known failures like the ABC, and other hydraulics. They will be very expensive when they fail.
I have had very good luck with my 2009 SL63, but then it is much newer and has only 22,500 miles. I DO have a warranty.

Based on the miles and the fact that is not an SL55 AMG, something in the low 20's would be the max I would consider. If you watch the Mecum or other auctions, these cars can be bought from 17-21, and they are usually in great cosmetic condition. Make an offer around 15 and go from there. Be sure to see if there is a warranty available first. You may also be able to get service records to give you more information about how the car has held up.
I think the engines between the 04 and 05 were the same, as you stated just things like command screen, blue tooth etc were better.
