I have tried multiple times to initiate Race Start on my SL63. Every time, the info center says to check my owners manual but I’ve been unable to determine what is preventing this. From what I can tell, the car is meeting all of the criteria but refusing to cooperate. Any suggestions?
Are you consulting the paper manual or the digital one built into the car? There is likely more detail in the digital version than you will find in the paper version.

Conditions for activation
You can activate RACE START if:
· the doors are closed.
· the engine is running and it has reached an operating temperature of approximately176 ‡ (80 †). This is the case when the engine oil temperature in the multifunction display stops flashing.
· SPORT handling mode is activated.
· the steering wheel is in the straight-ahead position.
· the vehicle is stationary and the brakepedal is depressed (left foot).
· the transmission is in position D.

"Sport Handling mode" is usually turned on by turning the traction control off on non-ABC cars. If it's on, race start likely won't work. Try putting the suspension in sport mode and turning the traction control off.

The suspension mode doesn't matter. Traction control does need to be off, which is sport handling mode.
One thing some people have said has gotten them before is they weren't pushing the brake pedal firmly enough.
