Real power kicks in a few seconds after WOT, normal?
Hard to explain, but say I floor the gas pedal.... it downshifts and goes fast but a few seconds later, another jolt of power kicks in and then it goes really fast, is it turbo lag that I'm getting?? Is the turbo lag that noticeable?

There's a lag I think due to the Drive By Wire. I had it bad, interesting though since I took the car in for a trans service at 40 K miles where they changed the oil and filter and must have reflashed the computer the car responds really nice now, must be a trans update or something that the dealer reflashed, I'd check that out if I were you, the car drives so much better now.

I think what you're experiencing is the car downshifting in segments to the fastest gear for you. My GT-R was like this too. It would downshift sequentially until it got you into the gear that could get you moving the fastest. The older AMGs with the fully automatic transmissions could go right from 5th to 2nd gear. These cars downshift a couple of times to get you there if you just mash the pedal. I'm assuming it's the protect the transmission and its components.
