Weight savings on a 21 inch or even a 20 with a mono vs a 3 piece is pretty good. Also Im not into wheels with lips right now- I ran my deep dish fetish in the 2000's... I like the face forward style wheel. Pricing is another thing- not that I cant afford them but I like to dump the wheels at 6-12 months and moving a wheel that costs 3-4k less (per set) is very easy.
There is room based on the offset but a 315 is not optimal on a 21x11, further- Michelin doesnt make a 315x25x21. In fact I have no idea who does.

Slang500's CLS63 waaaaaaay back in the day.... I say it like its ancient but it was 6 years ago. He had a one of the best looking CLS's around
