Handling
So I've had my car for a few weeks now. I've spent that time getting little things fixed and getting it cleaned up. Trying to figure it out and see if it was safe to drive hard. Never know what your getting in a used car. So I've finally started to DRIVE the car, one thing I noticed was some pretty good oversteer. Is this normal for the C55? Other than the heavy steering feel is there anything else handling wise I should be aware of?

In my experience from tracking the C55, understeer is the predominant trait when entering a turn too fast. Oversteer can certainly occur, but only with aggressive throttle inputs and with ESP turned "off".
More sticky performance tires is the best solution to decrease the understeer/oversteer.

Does your car have stock suspension and sway bars? Aftermarket H&R sway bars have turned understeer into mild oversteer for my car. As mentioned before, definitely check your tires and go with a good summer performance set for grip.

Tires are good wear wise and inflation is to spec. Its one of the little things I had to take care of, one of the rears was bad. They are Continental ContiPro's an OEM tire, they are All Season though. Stock suspension and sway bars. It may be that I have to get used to the extra power and relearning to drive a high horsepower car again, my throttle input timing is off I'm sure. My previous car was a C230 and I could drive it well, but now I have an extra 162 hp.

I have those exact tires in 255 series in the back on my C55 and they break traction really easily.
The guy at the tire shop was saying they would grip like the set of Conti DWs I had before, but would give me twice the wear life. He was half right- they are lasting forever...
I'm going 100% summer tires from now on.

My rears' are 265, not my choice they came with the car and they are like new, so I didn't change them to the spec 245's. I really haven't tried to break them loose yet. LOL

Those are horrible tires for this car. This is what you find on your average underpowered Mercedes sedan that doesn't have traction issues. Get some sticky tires in a 255 size.
