I don't think you can buy the discs separate from the hats at the dealer. I think you are out of luck. You can buy aftermarket discs but I am not sure they will fit the OEM hats.

FF. W212 E63 M156 non-pano 18" P2 ParkT NightV (gone but will be missed).
I wonder what's the reason for not allowing the reuse of the hat. One of the advantage of such is the hat reusage. I wonder if Brembo will sell just the disc since they are the ones who make them.

The reason is $$ and because they can!

I did the front Brembos on my M5 whille reusing the hats, about 4 years ago. It's a little time-consuming and you'll need a 3/8" torque wrench (you won't believe the low torque value specified for assembly of the clips) but easy work. I suspect that a little poking around will unearth the part numbers for just the replacement disc.

This week I searched for rotor ring replacement of C 63 front. On racingbrrake.com a whole series of rings come up, but the site puts the onus on the owner to select the proper one. The search words "C 63" on that site brought pn 34041-311K-01 , 355 mm. I realized I failed to measure disc dia and hat bolt circle last opportunity, so cannot react to that pn. I sent an email which has not been answered. I'm resting now. Maybe more later.
