Proper car/transmission setting for dyno pulls

Proper car/transmission setting for dyno pulls
For my own knowledge, can anyone tell me the "proper" or "ideal" settings when doing a dyno pull (Mustang or Dynojet, if it matters).
Car is 2010 C63 AMG P30
I'm assuming that you would be the car in Manual mode and leave ESC on (shouldn't matter since its strapped down and doing a pull in 4th gear?).
You would then slowly move through the gears until 4th gear at which point you would nail the throttle until redline?
I know when the car is in sport mode and you nail the throttle from say a normal cruising speed of say 50mph it would automatically downshift into 2nd or maybe 3rd. This wouldn't be ideal if you are on a dyno as the numbers may be skewed.
I'm going to test it myself here shortly but wanted to try and get some feedback. A local shop is willing to let me bring my car down tonight (yes it's 8pm on a Saturday) and do some pulls

Also for clarification if the car is stock without a tune should it be pulled in 5th gear to avoid the limiter and then repulled in 5th to have an accurate stock-to-tune analysis or should 4th gear pulls be done in both situations?
