Will coilovers stiffen her up?
I've got a slight rubbing issue when there's a lot of weight in the car going over bigger bumps, I've had a black series body kit put on my CLK, the steel arches cut and rolled up and the fiberglass arches over the top, with wheel spacers pushing the wheels out past where the old arches sat, the tyres catch on the old steel every so often, I've cut them back about as far as they will go until almost level with the fiberglass arches, my other worry is that if I take the steel too far, the tyres will probably start smashing into the fiberglass ones on big bumps, the only real fix other than coilovers would be shorter wheel spacers (which would look not so good)
I've got some pro sport coilovers, if I have the rear ones fitted and set to the highest setting, is it likely that I will get less wheel travel than the stock shocks?

id say yes. had a similar problem with my old 211 before and coilovers solved the rubbing issue. apart from being able to adjust the height, a bit of stiffness compared to the bounciness of H&R and stock shocks helped with the rubbing issue. goodluck!

Stiffer suspension helps, but if you want to fine tune it... look for coilovers with adjustable damping, not preset. You could also try cambering her a bit to get a better clearance tuck, although tradeoff is uneven tire wear.

Yep I had adjustable shocks on one of my old cars with lowering springs, I was able to get the perfect damping. Coilovers would work well but fully adjustable are usually quite expensive.

Update, I had the rear coilivers fitted today, springs and dampers, the verdict is quite terrible, the tyres now rub the arches just with me in the car going round corners, after an hour of driving it started making a twang, ping, knock, bang sound when going over bumps as well, safe to say they're coming off tomorrow and the OEM springs putting back in and maybe trying something else, but I can't think what? Maybe camber adjustment as already suggested but how? Will I need a camber kit like the one eibach make?

What coilovers did you use? I have kw and at the highest setting it is about a 10mm drop. I made custom collars for it so i can have it at stock height. Definitely very little travel with the upgraded shocks.
