It's the little up and down black knob next to your light switch. Atleast on my c63 it is and all other cars I have ever driven
Edit: did some research its in the settings. Press the home button on the steering wheel, go to settings, instrument cluster, brightness.

Strangely enough, when you try to download the 2018 GT coupe owner's manual you get the roadster manual (which differs from the coupe manual). But if you go to the Canadian site you can download the coupe manual.
