Any current design of ethernet camera is possible. You have to most likely remove the plastic shell. You then get the camera to FTP its images to a storage server of some type. The cheapest is this one

It already has a user account for a camera built into the firmware. All you need then is a 80Gb laptop drive with shock mountings and you can store about a months worth of footage.
