What is the difference between 35 and 37 offset?

What is the difference between 35 and 37 offset?
I just got my 2000 c230 kompressor lowered on Vogtland springs and Bilstein sport shocks. Im looking to get a 17inch rim. I noticed that on the c36 and c43 they have a 35 offset but the c32s have a 37 offset. My stock rims off my car have a 37 offset. What is the difference? and what is the better choice of the two?
