Normal Operating Temp?

I have owned my car for about 9 months and put 11k miles on it to date. About 4 months ago my mechanic said my water pump was starting to leak... When we were getting into the 90's I noticed the operating temp rising, one day I left it idling with A/C on it was 103 outside and it got to about 107c when I shut the car down. I got new water pump and thermostat installed. Car still seems to be running typically around 87-90c, yesterday I let it sit and idle for about 10-15min watching it creep up to 100c then a fan kicked on knocking the temp down. I just want to make sure this is normal? Should my car be running this hot with coolant being properly pushed through engine, I know MB engines tend to run hotter.

That is where my temp is sitting or a little lower sometimes on highway, but if I let it idle for 8-10min+ in warm temps like 88-90+ it hits 100c then the fans kick in, so I guess all seems good. Think this new thermometer is also an 87c where the predecessor was low 80's which would make a difference. Will have radiator checked at next coolant change. Thx!
