Regardless of who tells you...
After switching springs .. your ride will be sacrificed..
i'm riding on HR's Sport Springs with stock shocks, and the ride is...well bouncy... Bottoms out once in a while (not a good feeling)
Also my 18's are rubbing a bit at extreme.. which is weird

Did you take all the pics with the H&R springs installed already? The wheel gap is still pretty big, doesn't seem much lower than stock?
I love your rims though, they look very nice. Sometimes I find the AMG rims a bit too bulky.

My $0.02 overpriced opinion:
FOR W203 MB:
H&R's, according to their own publications are 25-30% stiffer than stock
Eibach's, according to their own publications are 15-20% stiffer than stock
Additionally, it is very clear that springs and shocks should be a matched set (any suspension or dynamics 101 class will teach this). Therefore, I suggest that if you do not plan to change the stock shocks, change the spring rate as little as possible. If you change the spring rate 25-30%, you really need to change the shocks, otherwise two things will happen:
1. Your ride will really suffer (underdamped suspension)
2. You will wear out the stock shocks in short order
Bottom line, stick with Eibach if you do not want to change the stock shocks.
