No you more than likely won't be able to switch back to stock wheels and tires after lowering it. The stock tires are too thick and I think they'll rub everywhere. You at want to consider looking for tires elsewhere if Tirerack doesn't have 255 all seasons. Or you can just do the 235s. The difference between the 235 and 255 isn't huge. The setup will still look virtually the same as the 255, it's just not as wide as a tire.

As far as i know im pretty sure you can switch it even if you lower your car, but it wont be good on your car if you have it lowered and have stock wheels and tires on because something about the tire rubbing against the inner fender is really bad... Honestly if you want to be able to drive all season and not switch tires, I would just stick with getting better looking 17" wheels. That way you don't have 19" wheels on your car and not have it lowered, looking like a truck. And it could save you some good money too because if you like your existing tires right now, then all you would have to do is add the new 17" wheels to them. I feel like thats your best route seeing you need all season tires and don't wanna lower your car. I could be wrong though.
