Disable ESP?
Is there a way to completely kill the ESP AND still have power steering assist?
If you just kill ESP in the dash, then the brakes still activate.
If you enable Dyno mode, then you lose power steering assist...
Can I pull the fuse or something? Winter is upon us and I want to have fun

Weren't you the guy that wanted to swap your sport suspension for better ride quality? I'm confused now......

You don't want to fully disable it; the ESP system is also used as a basic form of limited slip differential for the rear (and also front for 4matic) axle by making use of the brakes. Hardware wise the rear (and front for 4matic) diff is an open diff, the ESP system uses the brakes to slow the wheel that is practically free spinning when no power is being sent to the other wheel
I've never had an issue with just turning it off via dash, however if you don't have M mode for shifting, the transmission does like to shift up a lot when you lose traction for a few seconds which can sort of bog you down
