Winter tires are not harder, softer in cold weather actually were as summer tires would get hard and not be flexible.
The noise you are hearing is just the more aggressive thread pattern found on winter tires, this is normal and you'll get use to it.
You can see this on big jeeps where you can hear the big tires humming on the highways because of the aggressive threads. Or even semi trucks where the threads on their tires can be more then an inch deep.
