It's time for a new battery in my W204 C300 (MY2010). Can I simply remove the old battery and connect up the new one? I have been told that I need to maintain power to the car during the change over. Is that correct, and if so how does one do that - using a second battery connected to the OBDII port?

Not required on these cars. It's not a bmw that requires the new battery to be programmed to the car. Just remove the battery, install the new one and everything will be as it was. The car will remember the clock and radio settings.
However, Mercedes does says that you may need to reset your clock, enter radio presets, initialize power windows and initialize the sunroof.
I never had to do that and I've disconnected my battery plenty of times. If you want to avoid these steps and have a jumper pack at hand, there is a red terminal close to the battery, you can't miss it. Plug your positive lead to that and ground on any metal surface. That will keep power to the car while you change out the battery.
