Does anyone know of a Repair / Workshop manual available for the new W205 series? I would like to obtain one for reference. Please let me know.

What you want is covered in the Mercedes Workshop Information System (WIS), which is part of their standard Xentry diagnostics suite and covers not only the 205 but all other previous models. It also includes a WSM module which gives you various repair/maintenance videos.
