anything i can do to make my 07 CLS63 sounds like late 63 AMG models?

I would improve the exhaust note rather than trying to make it sound like the newer ones, seriously the M156 is one of the best sounding engines ever I have no idea why you would want to try to change its character. If the setup is the same on the W211, a resonator delete will give it a deeper tone and a crackle when you let off at high RPM. Won't be too much louder but seems to be a common AMG mod. You could also do a muffler delete with a j-pipe which is what I did, very docile at idle but absolutely screams at WOT, sounds very good I've been told. You could also just get an aftermarket exhaust but that's pretty expensive. Or maybe get a hold of some C63 AMG mufflers, those things sound like thunder.

Removing the primary cat will trip a CEL error, but the rest of the exhaust system doesn't have sensors. Since it's a naturally aspirated engine if you're going to remove or straight pipe anything I would make sure it's as far back in the exhaust system as possible to make sure you still get the benefits from scavenging.
