Depends on the brand of tire but yes, generally speaking, that should work. I had that exact set up with my winter tires (Dunlop SP Wintersport), which I would consider to run large or "fat" due to the large rubber blocks surrounding the lip of the tire, and I did not have any rubbing issues. You will have a little bit of a "ballooned" look, where the lip of the tire will hang out over the rim. 255 is best for the rear in terms of looks IMO.
