Is it possible to set a "default" for my cluster so it shows the digital speed when I turn the car on instead of the odometer/trip when I turn it on?
I have a brand new 2011 C300 loaner car and noticed it remembers what you were last on, but I'm guessing that's a new thing.

No, the only way that the digital speed will be on all the time is if you choose it in your settings, but then you won't have the temperature showing.
