custom wheel sizing

Sorry if this is a little bit off topic (but hopefully this could be just as useful of a topic for 202 discussion) but I'm trying to size some custom 3-pc racing wheels for my project car (a w201). Just wondering if any of you 202 guys have any experience w/ this and possibly some tips? I have decided the size of wheel and tires that I want to use, and fender clearance will not be an issue (I'll be using 500e style flares to fit everything), but I am concerned w/ finding the right offset. Any ideas? The wheels are:

front
17x8.0 w/ 225/45/17 rubber
rear
17x9.0 w/ 255/40/17 rubber

My first thought is to just use the standard 35 offset that I have been using, but obviously there could be disadvantages to this. Is there a good way to measure things once the wheels are off and figure out the geometry? I'm thinking about making a cardboard mock-up of the wheel along with a movable center where I can test various offsets for clearance. The main problem that I see is finding wheel well clearance when the struts are fully loaded. Thoughts? Thanks guys!
